[In English below] Jesienne wieczory i ta kolacja. 🍄‍🟫🤎🍁Kopytka w sosie kurkowym.🍂🕯️ Składniki na 2 porcje: Kopytka: 300 g ugotowanych ziemniaków 1 jajko 1 łyżka mąki ziemniaczanej 50 g mąki pszennej + dodatkowo do podsypania i ewentualnego dodania do ciasta, jeśli będzie zbyt miękkie Sos kurkowy: 2 łyżki oliwy 150–200 g kurek 1 łodyga selera naciowego, pokrojona w kostkę ½ czerwonej cebuli, pokrojonej w kostkę 1 ząbek czosnku, pokrojony w plasterki 100 ml białego wytrawnego wina 100 ml bulionu lub wody z gotowania kopytek 1 duża łyżka mascarpone lub 50 ml śmietanki 2–3 łyżki startego parmezanu 1 łyżka posiekanego szczypiorku 1 łyżka posiekanej natki pietruszki sól i pieprz do smaku Przygotowanie Na oliwie podsmaż warzywa i kurki, aż się lekko zarumienią. Podziel ciasto na kilka części i z każdej uformuj wałek o grubości około 1,5–2 cm, podsypując go mąką. Pokrój wałki na skos, tak aby powstały kopytka. Kopytka gotuj we wrzącej, osolonej wodzie. Gdy wypłyną na powierzchnię, gotuj je jeszcze przez około 2 minuty, a następnie odcedź. Dodaj kopytka do sosu. Wsyp parmezan oraz dodaj posiekany szczypiorek i natkę pietruszki. Wymieszaj całość i podawaj w głębokich talerzach. Smacznego! Autumn evenings and this dinner. 🍄‍🟫🤎🍁 Polish potato dumplings (kopytka) with chanterelle sauce. 🍂🕯️ Ingredients – serves 2 Kopytka: 300 g cooked potatoes 1 egg 1 tbsp potato starch 50 g all-purpose flour, plus extra for dusting and more if the dough is too soft Chanterelle sauce: 2 tbsp olive oil 150–200 g chanterelle mushrooms 1 celery stalk, diced ½ red onion, diced 1 garlic clove, thinly sliced 100 ml dry white wine 100 ml stock or water from cooking the kopytka 1 heaped tbsp mascarpone or 50 ml heavy cream 2–3 tbsp grated Parmesan 1 tbsp chopped chives 1 tbsp chopped fresh parsley salt and pepper, to taste Method Heat the olive oil in a pan and sauté the vegetables and chanterelles until lightly golden. Pour in the wine and cook over medium heat for about 5 minutes. Add the stock and mascarpone, then simmer over low heat for about 10 minutes. Meanwhile, prepare the kopytka. Press the cooked potatoes through a potato ricer into a bowl. Add the egg, potato starch, and flour, and mix until combined. Transfer the dough to a work surface or large board and knead gently, dusting with flour as needed. The dough should be soft and pliable. Divide the dough into several pieces and roll each one into a rope about 1.5–2 cm thick, dusting lightly with flour. Cut the ropes diagonally into small dumplings. Cook the kopytka in a pot of boiling salted water. Once they float to the surface, cook for another 2 minutes, then drain. Add the kopytka to the chanterelle sauce. Stir in the Parmesan, chopped chives, and parsley. Toss everything together and serve in deep bowls. Enjoy! 🤎🍂 #chanterellesecipe #autumnvibes🍁 #kopytka #kurki
