Make sure the chicken is well coated with the marinade. Refrigerate for at least 4 hours or overnight for best results. Preheat your BBQ  Remove the chicken from the marinade and shake off any excess.  Grill the chicken thighs for about 5-7 minutes on each side or until they are cooked through & have a nice char.  While grilling the chicken, also grill the pineapple slices until they have grill marks, about 3 mins per side. Coleslaw:		 In a bowl, combine both cabbages, julienned carrot, spring onion greens, a pinch of salt, apple cider vinegar & a drizzle of olive oil. Toss everything together until well combined. Coriander Lime Mayo:		 In a food processor, blend together the mayo, fresh coriander, lime juice, cracked pepper and minced garlic Assembly:		 Toast the brioche buns on the grill until they are lightly browned.
