I personally only want the best for my family, so Organic Salmon is the way to go! Here’s the full PEPES SALMON Recipe ⬇️✨ STEP 1: CHAR SPICES 2 Big Red Chili 2 Birds Eye Chili 4 Garlic (15g) 6 Shallots (25g) 1 Candlenut 1.5cm Turmeric (5g) Roast spices on a dry pan til it gains a nice char. STEP 2: BLEND SPICE PASTE Charred Spices A bit of water (about 30-50ml, just so spices blend smoothly) Blend the charred spices with a bit of water til it turns into a smooth paste. STEP 3: SAUTÉ SPICE PASTE Spice Paste 1 Kaffir Lime Leaf 1 Indonesian Bay Leaf 1 Lemongrass Stalk (smashed) Salt & Mushroom Stock Powder (according to taste) about 0.5tsp each Sauté the spice paste in a pan, then add the leaves, lemongrass & seasonings. Keep sautéing til the spice paste becomes fragrant, thickens & deepens in color. STEP 4: STEAM SALMON Spice Paste Banana leaves 200g Salmon Fillet (cut to 2pcs) Lemon Basil Leaves Extra bird eye chili Rub the spice paste all over the salmon, then wrap the salmon in banana leaves with more spice paste, a handful of lemon basil leaves and 1 whole chili. 🇫🇷 Creamy, Lemony Chicken | Poulet en Fricassée, as written in my French Grandma’s 80’s recipe book! My first time making it, and I’m pretty happy with how it turned out 😍 BUT next time, I would definitely reduce the sauce a bit more and see if it can be a tad thicker. Test the recipe out for yourselves! Preparation: 10 minutes Cooking time: 1 hr 15 min Serves: 6 Ingredients: * 1 chicken (about 1.5 kg), cut into pieces * 1 or 2 carrots * 1 onion * 80 g butter * 1 glass of dry white wine * 150 g mushrooms * 2 egg yolks * A squeeze of lemon * Salt, pepper * Bouquet garni (a bundle of herbs: Parsley, Thyme, Bayleaf) Instructions: 1. Boil the chicken In a large pot, bring 1.5 liters of water to a boil with the bouquet garni, carrots, and onion cut into slices. Add the chicken pieces and let simmer for 20 minutes. Drain and pat dry the chicken using absorbent paper. *save 1 glass of cooking broth for later. 2. Sauté the chicken In a large Dutch oven or deep skillet, melt the butter. Add the chicken pieces and brown them lightly without letting them take on too much color. 3. Deglaze & simmer Pour in the white wine, let it deglaze the pan and cook a bit, then and 1 glass of the cooking broth. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer covered for another 30 minutes. 4. Remove chicken & keep warm Take out the chicken pieces and place them in the serving dish, keeping them warm. 5. Make the sauce Add the chopped mushrooms to the pan, and reduce the sauce by one-third. 6. Finish with eggs & lemon Beat the egg yolks in a bowl and gradually pour in the hot sauce while whisking.
