Place some grated cheese over the heavy cream. 10. Arrange the root vegetables into nice, neat, colorful rows. 11. Season the vegetables with a pinch of salt, then top with the remaining grated cheese and some freshly grated nutmeg. 12. Add the remaining heavy cream. 13. Cover the gratin with aluminum foil and bake for 40 to 45 minutes. 14. Remove the aluminum foil cover and continue to cook for around 15 minutes, until the top is nicely browned and everything is bubbling hot.
