Salsa Verde White Chicken Chili 🥣 I’ve been making some version of this white chicken chili for almost ten years now, and when I say this is my best version yet, I mean it. There are a few reasons why: First, I made the salsa verde from scratch this time, and yes, it really does make all the difference. It adds a freshness and depth that jarred versions just can’t quite replicate.  Second, I used chicken thighs instead of breasts. They stay so much juicier and bring a richness to the broth that makes the whole thing feel more complete.  And finally, I blended one of the cans of beans before stirring it back in, which makes the chili creamy without making it heavy or overly thick. I’m never going back. Ingredients below, full recipe is in my bio! Chili 1–2 tbsp olive oil 1 lb boneless, skinless chicken thighs Salt and black pepper, to taste 1 medium yellow onion, diced 2 poblano peppers, diced 1 jalapeño, diced (seeds removed for less heat) ½ cup roasted Hatch chiles, chopped (optional; or substitute 1 (4 oz) can diced green chiles) 6–10 cloves garlic, minced Splash of beer, optional (for deglazing) 4 cups low-sodium chicken broth 2 cups homemade salsa verde (recipe below) 2 (15 oz) cans white beans, drained and rinsed 1 cup fire-roasted corn kernels (optional) Zest of ½ lime, to taste Juice of 1 lime, to taste ½ cup Mexican crema, room temperature ½ cup chopped fresh cilantro (optional) Seasonings 1 tbsp + 1 tsp ground cumin 1 tsp dried oregano (Mexican oregano if available) 1 tsp smoked paprika 1 tsp ground coriander 2 tsp chili powder, divided 1 tsp Aleppo pepper or substitute ¼–½ tsp cayenne pepper 1 bay leaf (optional) #chili #whitechickenchili #salsaverde #FoodTok #cooking
