You’ll see plenty of versions that use cream but this is more inline with a traditional method albeit no claims about it being authentic know how people like to get themselves worked up about that stuff lol   This served 6 people but I’d happily eat most of it myself   4 egg yolks 100g caster sugar 4 egg whites 50g caster sugar 400g mascarpone 1 tsp vanilla bean paste 150ml espresso or strong coffee 50ml coffee liqueur 200g savoiardi or lady fingers (additional recipe below) Cocoa powder Dark chocolate   Mix the egg yolk with the sugar until light and pale Whisk the egg whites to form soft peaks then whisk in the sugar 1 tbsp at a time Loosen the mascarpone with the vanilla then add the egg yolk mix Whisk in 1/3 of the egg white mix then fold through the rest Mix the espresso and liqueur then allow to cool Coat the base of your dish with cocoa and chocolate then add a layer of soaked sponge (3 seconds dipping) then a layer of the mascarpone mix and repeat until full Set in a fridge for at least 6 hours ideally 8   Savoiardi recipe   3 eggs separated 90g caster sugar 25g icing sugar 150g plain flour 2g baking powder 2 g salt   Mix the yolks, icing sugar and half the caster sugar in a bowl until light and pale Whisk the whites with the remaining sugar to soft peaks combine with the yolk mixture Sieve in the flour, salt and baking powder then fold through the mix. Add to a piping bag and chill in a fridge for 30 mins Pipe into 5-6cm oblong shapes Bake in a preheated oven at 180c for 15 mins   #tiramisu #dessert #desserts #sweetrecipe #dessertrecipe
