1/2 cup mayonnaise
1 teaspoon lemon zest
2-3 teaspoons lemon juice, fresh
1 teaspoon Dijon mustard
1 clove garlic, minced
salt and pepper, to taste For the burger:
500g minced beef, I used 80/20
2 tablespoons red wine
1 & 1/2 teaspoons salt
1 teaspoon black pepper
1 & 1/2 tablespoons garlic, minced
1/4 cup green onions, chopped For the crispy onion strings:
1 whole large onion
1 cup buttermilk
1 cups all-purpose flour
1 tablespoon salt
1/4 teaspoon cayenne pepper 1/4 teaspoon onion powder 1/4 teaspoon garlic powder
Black pepper, to taste
Canola oil To assemble:
Goat cheese, softened
4 strips of thick-cut bacon
4 hamburger buns Mayonnaise for spread  Instructions Make Aioli: Mix mayonnaise, zest, lemon juice, Dijon, minced garlic, salt, and pepper in a small bowl. Be cautious with lemon juice to avoid runniness. In a medium bowl, combine minced beef, red wine, salt, pepper, garlic, and green onions. Shape into 4-5 inch patties, pressing centers down. Thinly slice onion; use a mandoline if available. Heat canola oil in a deep pan over medium-high. In a bowl, mix buttermilk, flour, salt, cayenne, black pepper, and onions. Fry in batches until golden brown. Drain on paper towels. In the same pan, cook bacon until crispy, then set aside. Sear burgers for 3-5 minutes on each side, then let rest. Spread mayo on cut sides of buns and toast in the pan until crispy. Layer buns, aioli, burgers, goat cheese, bacon, onions, and extra aioli if desired.
