@theshayspence: skillet chicken breasts smothered in a creamy cajun-seasoned sauce 🙌 follow along for more chicken-spiration 🐓 SKILLET CAJUN CHICKEN 4 boneless, skinless chicken breast halves 4 tsp. cajun seasoning, divided 4 Tbsp. butter, divided 1 red onion, chopped 1 bell pepper, chopped 1 cup chopped cherry tomatoes 4 garlic cloves, sliced 1 1/2 Tbsp. flour 1 cup chicken stock 1/3 cup heavy cream 2 Tbsp. chopped fresh parsley Cooked rice, for serving Season chicken with half of the cajun seasoning and heat a large skillet over medium-high heat. Add half the butter to the skillet then cook chicken until browned on each side, about 3 minutes per side. Transfer chicken to a plate. Reduce heat to medium and add remaining butter to skillet. Cook onion and bell pepper until softened, about 5 minutes. Add tomatoes and garlic and cook one minute, then add flour and remaining Cajun seasoning and cook an additional minute, stirring constantly. Whisk in chicken stock and bring to a simmer, then add cream and reduce heat to low. Taste and add more seasoning, if desired. Return chicken to the pan and cover with a lid. Cook 5 minutes, then remove lid, turn chicken over and cook for another 3-5 minutes until sauce has thickened.
