🍝 Creamy Pesto pasta and fatherhood 🍝 Being a dad is the best thing in the world, and to celebrate the fact that my tiny weeny baby turns 2 this week, here’s a recipe that both she and I love ❤️ Ingredients * 1 bunch of fresh basil * 1 handful of pine nuts * 1 clove garlic * Juice of 1 lemon * Pinch of chilli flakes (optional) * Salt and black pepper, to taste * ¼ cup Parmesan cheese (or nutritional yeast for vegan option) * 200 g silken tofu * Pasta of choice (enough for serving) I used @northernpastaco * Extra Parmesan, chilli flakes, basil leaves, and olive oil for topping Method 1. In a blender or food processor, combine the basil, pine nuts, garlic, lemon juice, chilli flakes (if using), salt, pepper, and Parmesan (or nutritional yeast). 2. Blend until smooth. 3. Add the silken tofu and blend again until creamy. 4. Cook the pasta according to package instructions. Drain, reserving a little pasta water. 5. Toss the hot pasta with the pesto sauce, adding a splash of pasta water if needed to loosen. 6. Serve topped with extra Parmesan (or nutritional yeast), chilli flakes, fresh basil, a drizzle of good olive oil, and seasoning to taste. #pasta
