Solo tenemos que tener un poquito de creatividad para recrear los sabores marinos. Parecen los más difíciles de conseguir pero con las algas, que son de los cultivos más sostenibles, podemos hacer cosas increíbles. 🐟 🐳 CALAMARATA MARINA INGREDIENTES (para 4 personas): 400 g pasta (tipo calamarata) 1 diente ajo 4 g algas secas (mejor wakame) 2 cucharadas alcaparras 18-20 aceitunas negras sin hueso 400 g tomates cherry ½ vaso vino blanco 1 puñado perejil Ralladura de limón Copos de cayena (al gusto) AOVE Sal PROCEDIMIENTO: 1. Rehidratar las algas con agua caliente durante 10 minutos. 2. A fuego medio sofreír el diente de ajo picado en una sartén con aceite de oliva. 3. Picar las algas rehidratadas y añadirlas a la sartén. Hacer los mismo con las alcaparras y las aceitunas. 4. Cortar por la mitad los tomates cherry y añadirlos al resto. 5. Subir el fuego y verter el vino blanco. 6. Cuando se haya evaporado, salar y añadir los copos de cayena si os gusta el picante. 7. Dejar cocinar tapado 10 minutos a fuego medio. Mientras tanto, cocer la calamarata. 8. Agregar la pasta al dente, el perejil picado, la ralladura de limón, un par de cazos del agua de cocción y cocinar hasta que quede cremoso. . . . . . #pasta #pastavegana #veganpasta #mar
MALABAR SPINACH SOUP | canh mồng too 1 bunch Malabar spinach 1/2 lb shrimp 11 cups water Minced garlic 1 TBSP fish sauce 1 tsp salt 1 TBSP chicken bouillon 1. Separately ur Malabar spinach into 2 piles— one pile with all the large stems and the other with the leaves and small stems. Discard the large stems. With the leaves, cut it thin. It does not need to be perfect 2. Rough chop 1/2 lb of shrimp. Add 1 egg yolk and season with salt and pepper. Mix well. Set this aside. 3. In a large pot, sauté some garlic until it’s nice and fragrant and golden. Then add 10-11 cups of water and bring to a boil. 4. Next, add your Malabar spinach and bring it back to a boil or until the edges start to bubble. 5. When the edges start to bubble, add 1 dollop of ur shrimp mixture. Do this 1 dallop at a time. 6. Next season ur broth how ever you’d like. I seasoned with: 1 TBSP fish sauce, 1 TBSP chicken bouillon, 1 tsp salt. Cook this until ur shrimp clusters float to the top. Then you’re done.
