Rub butter into flour and cornflour until breadcrumb-like. 2.	Stir in icing sugar and salt. 3.	Add eggs and mix to a dough, adding a little cold water only if needed. 4.	Roll out, line a 10-inch pie dish, crimp edges, and chill 20 minutes. 5.	Dock the base, line with paper and baking beans, and blind bake at 180°C fan for 15 minutes. 6.	Remove beans and paper, bake 5–7 minutes more until base looks dry and lightly golden. Cool slightly. 7.	Whisk browned butter, melted butter, dark brown sugar, and caster sugar until smooth. 8.	Whisk in egg, yolk, and vanilla. 9.	Fold in flour, bicarbonate of soda, salt, and espresso powder. 10.	Fold in chocolate chunks and chips. 11.	Spread filling into the blind-baked crust and smooth the top. 12.	Scatter extra chocolate chips over the surface. 13.
