I’m a dietitian and this Roasted Cauliflower & Chickpea Salad is one of my favourite ways to fibre-max 🥦✨This recipe is straight for my new nourishing salads e-book, so if you want more fibre packed recipes like this, make sure you grab it. It’s linked to my bio 🎉 So what is fibre-maxxing? 🌾 It’s about deliberately adding as much fibre as possible into your meals and snacks - think veggies, legumes, wholegrains, fruit, nuts and seeds - to help you reach that 25–30g/day fibre goal most of us miss. Why fibre matters: ✅ Supports gut health ✅ Helps balance blood sugars ✅ Keeps you full & energised This bowl is the perfect example: roasted cauliflower, crispy chickpeas, onion, parsley, sweet dates and a little feta for flavour. Fibre + flavour = the ultimate salad combo. INGREDIENTS: Salad: 1 head cauliflower, cut into small florets 1 x 400g can chickpeas, drained and rinsed 1 small red onion, sliced 2 Tbsp extra virgin olive oil 1 tsp cumin ½ tsp paprika Pinch of salt 8 medjool dates, pitted and chopped ½ cup parsley, roughly chopped 150g feta, crumbled ¼ cup pine nuts, toasted Dressing: 3 Tbsp tahini Juice of 1 lemon 1 Tbsp extra virgin olive oil 2 Tbsp water 1 clove garlic, grated Pinch of salt METHOD: Preheat oven to 180°C and line a large baking tray with baking paper. Spread cauliflower, chickpeas and onion on a lined baking tray and toss with oil and spices. Roast for 30 minutes or until golden, turning halfway. Place roasted mixture into a large serving bowl and add remaining salad ingredients. Whisk dressing ingredients together and pour over salad. Toss to combine and enjoy.
