@halicopteraway: Heart shaped macarons for Valentine’s Day! Personally the Italian macaron method is my favorite as I find it to be the most consistent Ingredients for ~24 macarons Italian macaron shells • 135 g almond flour • 135 g powdered sugar • 33 g water • 117 g granulated sugar • 100 g egg whites (about 3) • Red or pink gel food dye Ruby chocolate ganache • 150 g ruby chocolate, finely chopped • 150 g heavy whipping cream Italian macaron making tips ▫️wipe down all your tools with vinegar or lemon juice to remove any oil or water ▫️make sure the egg whites are at soft peaks before adding the sugar syrup, otherwise the meringue can be soupy ▫️make sure your meringue reaches stiff peaks - the peaks should not bend or flop ▫️mix the batter until it flows like lava. You don’t need to be gentle during this process as you are trying to squish out air. Just be careful not to overmix ▫️let the macarons rest until skins form to prevent cracking ▫️use an oven thermometer to calibrate temperature as macarons are very temperature sensitive #macarons #bemyvalentine #bakingtok
