🇲🇦Chicken with Vermicelli & Green Olives — One-Pan Version 🍗🍜 A lot of people make this dish in a pot or pressure cooker… but as you already know, I love doing everything in one big pan and, most importantly, being able to put the pan straight on the table haha 😛❤️ So this time, I decided to make my own one-pan version! 🛒 INGREDIENTS 🍗 For the chicken: * 5 chicken drumsticks (you can of course use more) * 1 tsp paprika * 1 tsp turmeric * 1 tsp ginger * ½ tsp black pepper * Salt * 1 heaped tsp tomato paste * 1 saffron cube * 4 garlic cloves, chopped * The flesh from 1 preserved lemon * Fresh parsley, chopped * Fresh coriander, chopped * Olive oil * A little water 🍜 For the vermicelli: * 400 g uncooked mung bean vermicelli * 165 g green olives * Fresh parsley, chopped * Fresh coriander, chopped * Lemon juice, to taste 👩🏻‍🍳 PREPARATION 1️⃣ Add the chicken drumsticks to a large bowl with the paprika, turmeric, ginger, black pepper, salt, tomato paste, saffron cube, garlic, preserved lemon, parsley, coriander, olive oil and a little water. Massage everything well into the chicken. Cover and marinate for at least 1 hour in the fridge. 2️⃣ Add a drizzle of olive oil to a large pan and sear the drumsticks for a few minutes on each side. 3️⃣ Add hot water to the marinade bowl to collect all the spices left behind, then pour it into the pan. Add enough water to reach halfway up the chicken. Cover and cook over low heat for about 40–45 minutes, turning the drumsticks about every 15 minutes. 4️⃣ Meanwhile, place the mung bean vermicelli in a bowl and cover with very hot water, off the heat. Soak for about 3–4 minutes, then drain well. 5️⃣ Once the drumsticks are tender, remove them from the pan. Take one ladle of sauce and pour it over the chicken to keep it juicy and prevent it from drying out. 6️⃣ Add the vermicelli to the remaining sauce and gently mix. Taste and adjust the seasoning if needed, using the same spices from the beginning. You can also add a little lemon juice to taste. 7️⃣ Add some of the green olives together with the fresh parsley and coriander, then gently mix. Add the remaining olives little by little, tasting as you go, until you reach the amount you like. I used 165 g, but you can adjust the amount according to your taste. Let everything heat through for a few minutes, just enough for the vermicelli to absorb the sauce. 8️⃣ Place the chicken drumsticks back on top of the vermicelli and serve everything straight from the pan. 🤤🍗🍜 I intentionally used a lot more vermicelli than chicken because I’m cooking just for myself and didn’t want to make a huge amount of chicken 😂.
