Patties - Divide the beef mince into eight 100g (3.5oz) balls. Heat a flat top grill or cast-iron pan and add the beef balls. Smash them flat using a burger smasher with a piece of cooking paper to prevent sticking. Season with salt. Once the edges start to brown, flip the patties and place slices of cheese on top. Cook for another 1-2 minutes until the cheese is melted and the patties are cooked through. 4. Toast the bread slices in a pan with plenty of butter. Spread the prepared sauce on both sides of each slice. Add some caramelised onions on one slice, top with two patties, then close with another slice of sauced bread. 5.
