RED CABBAGE SALATTA + chimichurri chicken strips Place all the ingredients in a large bowl, pour dressing and mix well. For the chicken: I used chimichurri as a Marinade (handful of parsley chopped, 3 garlic cloves, 6 tbsp of olive oil or more, INGREDIENTS ½ Small Red Cabbage - finely diced 3 Persian Cucumbers - finely diced 1 Red Pepper - finely diced 2 Green Onions with whites included - finely diced 1 Bunch of Cilantro - finely chopped, leaves and stalks 1 Handful of Mint - chopped ½ Pomegranate - seeded DRESSING ¼ cup Olive Oil 2 Tbsp. Freshly Squeezed Orange Juice 1 Tbsp White Wine Vinegar (Apple Cider Vinegar or Lemon Juice also ok) 1 Tsp Honey 2 Tsp Pomegranate Molasses ½ Tsp Salt or more to taste Place all the ingredients in a large bowl, pour dressing and mix well. For the chicken: I used chimichurri as a Marinade (handful of parsley chopped, 3 garlic cloves, 6 tbsp of olive oil or more, salt, red chili flakes, squeeze of lemon) Paired that with cauliflower hummus 5.
