Triple Stack Tofu Wrap 💚🍃 @Spotify Australia & NZ wrapped is officially back so here’s my attempt at making an epic green wrap inspired by the Spotify logo… How do you think I did?! 👀 Inside we’ve got layers of pesto, rocket, tofu, zucchini and avocado. Was super fun to throw together but also surprisingly delicious!  Ingredients:  200g firm tofu  2 tbsp olive oil  1/2 tbsp soy sauce 1 tbsp lime or lemon juice 1 tsp maple syrup  1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp smoked paprika 1/2 tsp dried oregano   1 zucchini, thinly sliced  1 wrap of your choice  2 tbsp pesto  1 cup rocket/arugula  1/2 avocado, thinly sliced  Method: 1. Slice your tofu into big thin sheets. Combine the olive oil, soy sauce, lime/lemon juice, maple, garlic, onion, paprika and oregano into a shallow tray or container. Whisk well then coat the tofu in it. Set aside and marinade for one hour.  2. Preheat your pan and spread an even coat of olive oil on top. Add on your zucchini slices and grill on both sides until charred. Season with salt and pepper.  3. Remove the zucchini from the pan and add on your tofu. Grill on both sides until charred.  4. To assemble, place one wrap down on your board or plate, spread on a generous amount of pesto, rocket/arugula, tofu, zucchini, tofu, avocado, tofu and more pesto and rocket. Fold in the sides then starting from the bottom, roll up tightly to close up the wrap.  6. Toast on a dry pan until the outside gets lightly brown and crispy. Slice in half and enjoy.
