For the filling: - 1lb lump crab meat - ½ cup breadcrumbs - ½ cup mayo - Handful roughly chopped parsley - 1 tbsp AP rub - Juice from 1 lemon - ½ cup shredded pepper jack cheese Remove the shells from the shrimp but leave the tail. Cut alongside the back of the shrimp, open it up and add a scoop of the filling. I like to make these in a cast iron skillet with a little butter and more AP rub on the top. This goes on the @webergrills Searwood at 275 degrees until the shrimp is cooked through, about 25 minutes or so. Remove, top with shredded parm, lemon juice and parsley.
