Finish plating and enjoy Potato Croquets - 400g cooked, peeled, and mashed potatoes - 35g flour - 25g potato starch  - egg yolk - 125g cubed cheese pieces - Sea salt to season  - Egg wash, flour, and bread crumbs (for coating) Process: 1. Mix potato, flour, starch, and sea salt until a dough forms. 2. Add enough egg yolk without the dough becoming too wet (you use the whole yolk or just a tiny part). 3. Roll out, cut and add cubed cheese. 4. Roll into a ball and dredge accordingly. 5. Fry at 170°C/338°F until golden brown.
