New York Striploin Steak Frites  How to cook a perfect New York Strip Steak. This does assume you have a 2 inch thick steak. If you perfectly cook the steak with amazing fries you don’t need a béarnaise or chimichurri sauce.  1. Let the steak warm up on a plate at room temperature for about 30 minutes.  2. Pat dry and heavily salt and pepper the steak including the edges. 3. Heat up a pan with extra virgin olive oil. You want the pan hot.  4. Sear the steak 2 minutes on one side. Use long tongs so you don’t burn yourself. Use a spatula to push down on the steak to ensure good contact.  5. Flip the steak and sear the second side for 2 minutes. At this time, I sear off the sides of the steak.  6. At the 4 minute mark, remove the steak and put it on a sheet pan.  7. I turn down the heat a bit and add the butter, garlic and thyme.  8. I pop the steak it into my anova precision oven at 130F and probe the steak. Then i take the garlic, butter and thyme and cover the steak with it. So the steak is soaking in that beautiful flavour.  Once the steak hits 120F it is done for a perfect rare steak. If you like medium rare then I would cook it at 140F and then until the internal temp hits 128F.  9. If you want to really make the sear look beautiful, finish with a quick one sided sear.  10. Serve with fries.
