Zacuscă is a vegetable spread that almost always consists of a base of red peppers, onions, and tomato. But there are many variations on this basic recipe depending on what region in Romania you are from. Mushrooms, white beans, and even fish can be added to the base, and they are all very delicious options. But for us, keeping it simple with eggplant is the way to go. Two tips for a food zacuscă: 1. Char the crap out of your peppers and eggplant so you have a wonderful smokey flavour. 2. Cook everything down slowly and gently to concentrate the flavours.
