Let me know if you guys give this a try :) Ground Turkey meatball ingredients: -1 lb ground turkey -olive oil -onion, diced -minced garlic -1 large egg -1/2 cup panko bread crumbs -2 handfuls chopped baby spinach -salt -pepper Pasta sauce recipe: -olive oil -minced garlic -1/2 stick unsalted butter -1/2 cup pasta water -salt -pepper -oregano Cook pasta according to package. I used linguine pasta. Drain pasta & reserve 1/2 cup for the sauce. Line a baking sheet with foil. Preheat oven to 400ºF. Heat olive oil in a pan and add in diced onions and cook until soft. Next add in minced garlic and cook for about a minute. Remove pan and let onion mixture cool down. In a bowl combine ground turkey, egg, bread crumbs, chopped spinach, salt, pepper, & onion mixture. Shape mixture into balls and arrange on lined baking sheet. Bake for 25 minutes or until cooked through. In the meantime make the pasta sauce. In the same pan we used for our onion mixture— add in olive oil, butter, pasta water, minced garlic, oregano, salt & papper and cook & simmer for a few minutes.
