Pesto Al Cavolo Nero 🥬 Cavolo nero or Tuscan kale is a staple in Tuscan cuisine and you will find it in many of their regional dishes. It's in season right now so I want to show you how to use it to make a delicious, seasonal, vibrant pesto! AD @cheersandcheese.uk Cavolo nero is so good for you. It's packed with essential vitamins, minerals and fibre and it gives the pesto a deep, earthy flavour. The @granapadanopdo cheese, which is naturally lactose-free, complements those flavours beautifully and gives body to the pesto while the crispy fruitiness of the @proseccodoc_uk Rosè cuts through the richness of the pesto and highlights the savoury, nutty notes. You can also add a few anchovies if you like for an extra layer of savouriness. You can use the pesto however you prefer, from a simple bruschetta to pasta, risotto - you name it! I served mine with trenette, a pasta shape similar to linguine. Here are the ingredients 👇 Or you can find the full written recipe on my website. Serves 4 200g cavolo nero, tough stalks removed 40g toasted walnuts 40g blanched almonds 1 small garlic clove, or ½ clove for a milder flavour 60g Grana Padano PDO cheese, finely grated 100ml extra virgin olive oil, plus extra if needed 2 anchovy fillets (optional) Fine sea salt & freshly ground black pepper #cheersandcheesetoEU #EUAgriPromo #pesto #pasta #italianfood Funded by the European Union.
