I’ve done the same thing but without soil but it requires daily watering and good drainage. Did it for my chickens and rabbits. 7 days of growth gives the highest nutrients.

You can also just sprinkle the corn on top of the dirt and then water it in and cover with something reusable to block light out for the sprouts to save $/soil
