In a medium saucepan, combine the 4 cups water, cinnamon stick, and piloncillo. Bring to a gentle simmer over medium heat and cook about 10 minutes, until the piloncillo has dissolved. Remove the cinnamon stick. 2. In a separate bowl, whisk the masa harina with the 1 cup cold water until completely smooth, with no lumps. 3. Whisk the masa slurry into the simmering liquid. Cook over medium low heat, whisking constantly, for 5 to 7 minutes, until it starts to thicken. 4. Add the milk and chopped chocolate. Whisk until the chocolate is fully melted and the mixture is smooth. 5. Continue simmering over low heat, whisking often to prevent scorching, for 8 to 10 minutes, until the champurrado is thick enough to coat the back of a spoon. 6. Stir in the salt and vanilla.
