KAFTA WRAPS If you love middle eastern food, these kofta wraps are an amazing weeknight meal. Super fun to make, ridiculously flavorful, and SO GOOD. I used a lowcarb pita as the base, but you can use any kind of pita or lavash. Then topped it with a garlicky tomato sauce, pickled red onions, tomato, feta and small dusting of sumac! Here is how I made it: 1.First, the kaftas. Grab a food processor, pulse together 1/2 small yellow onion, 4-6 cloves garlic, 1/4 cup walnuts, a handful of fresh parsley, dill, & chives. You can use whatever fresh herbs you like. Then add 2lbs ground beef (or 1lb mix of beef and 1lb lamb) to a bowl. Top it with the processed marinate. Add a couple pinches salt, 1tbsp thyme, 1 tbsp garlic powder, 1 tbsp paprika, 1/2 tbsp Aleppo pepper, and 1 tsp cumin. Mix really well, cover and marinade for at least 30 mins, but ideally 2-12 hrs. 2.When you’re ready to make them, roll them in logs, patties, or whatever shape you like. You can grill these or pan fry them on medium-high heat. Time depends on thickness, so keep an eye out. 3.For the express pickled onions, I thinly sliced half a red onion and added it to a bowl with 2 tbsp finely chopped fresh parsley, the juice of 1 lemon, and a generous pinch of salt. Mix it well, then let it sit while you work the rest, mixing every couple of minutes. 4.For the garlicky tomato sauce, I mixed 3 tbsp mayo, 2 tsp tomato paste, 4-5 minced garlic cloves, a small squeeze of fresh lemon juice, and a generous pinch of salt and pepper. Mix well, taste, and adjust. 5.Lastly, crumble up some feta, thinly slice tomato, and finely chop some parsley. 6.Pull it all together by adding 1 or 2 tbsp of sauce, 2-3 kaftas, some sliced tomato, the pickled red onion, some fresh parsley, crumbled feta, and a dusting of sumac over your base of choice. I used lowcarb pitas, but you can use whatever you like. ENJOY!
