Place the coconut bar on another sheet of baking paper and repeat the process. Fill each coconut bar with the melted white chocolate. Let the chocolate harden. Once the chocolate has hardened, slice the coconut bars into desired pieces. You can cut them diagonally for a fancier look. Tips: You can use any type of chocolate for the filling. Use a warm, sharp knife to slice the coconut cookies. Makes 40 cookies - 30 minutes

Add the water and sugar and mix well. Cook until the sugar mixture begins to turn golden brown. Add the heavy cream and whisk until well combined. When the caramel sauce begins to darken, add the unsalted butter. Mix well. Remove the pan from the heat and stir until smooth. Add the peanuts to the caramel sauce. Mix well. Take a baking dish and line it with parchment paper. Spread the peanut-caramel mixture over it. Cover with a sheet of plastic wrap and press the peanut mixture firmly. Remove the plastic wrap.
