When the water has evaporated, turn off the heat. Leave the pan covered for 15 minutes.   Bring the chicken breast to a boil in a pan with half-full water and salt. Place the breadcrumbs in another bowl. Take the rice croquette and dip it into the egg mixture, followed by the breadcrumbs. Repeat.   Heat a layer of sunflower oil over medium heat (170 ℃).
