THE CREAMY CHICKEN AND RICE BREAKFAST BURRITO… aka the burrito dreams are made of. 👏🏼👏🏼👏🏼 Seriously. It’s perfect for meal prepping. It’s perfect for busy mornings. But it’s also delish any time of day. (My 7 year old had one for dinner last night).  ✨RECIPE✨  (at the end I’ll put a few ways to make this even easier!)  What you need: 1.5 lbs chicken thighs, 1 white onion, 5 Roma tomatoes, 1 jalapeño, 2 limes, Spanish style rice (I prefer RightRice), 10 oz Greek yogurt, 1/4 cup green enchilada sauce, 10 oz shredded cheddar cheese, tortillas, & seasoning  •Season the chicken thighs w salt, garlic powder, onion powder, paprika, and chili powder  •Airfry the chicken at 375 for 15 min •In a large bowl, add:  -onion, diced   -tomatoes, diced  -jalapeño, diced   -the juice of both limes  -salt, pepper, & garlic powder  (This is the recipe for the yummiest pico ever, btw) •Separately, cook a bag of Spanish Style Right Rice •Once cooked, chop the chicken into bite size pieces and add to the pico.  •Add to the bowl…  -10 oz of plain Greek yogurt   -1/4 cup green enchilada sauce   -8-10 oz shredded cheddar cheese   -the cooked rice •Mix it all together, then fill your burritos!  •Wrap each burrito separately in aluminum foil then pop in the freezer!  TO REHEAT: thaw overnight in fridge or microwave 2 min (1 on each side). Then bake at 400 for 8-12 min OR air fry at 375 for 6 min (our preferred method). You could eat these right out of the microwave but baking or air frying it gives it the perfect crunch! 💥 🙌🏼 to make this recipe even simpler, replace the chicken thighs with a rotisserie chicken. Pull the meat off and then season the chicken with the above spices. ALSO, you’re welcome to buy pre-made pico! That would cut out the chopping of the veggies! I just really love our pico recipe.  Also, we’re newfound fans of RightRice. It’s a blend of vegetables & is healthier than traditional rice. It has more than double the protein, five times more fiber, and almost 40% less net carbs.
