A blender that does all the work for you? Ninja’s durable stainless-steel blades and powerful 1000W motor easily blend the toughest ingredients, including fruit, vegetables, nuts, seeds and even ice. Ingredients: - 5 Roma tomato’s  - 1 full head Garlic  - 1 tsp Oregano - 1 tsp Thyme  - 1 tsp Basil  - Salt to taste  - Black pepper to taste  - 2 tbsp Olive oil  - 1 small brown Onion  - 1 jar Sun dried tomato’s, drained  - 1 tbsp Capers  - 1/4 cup Parmesan cheese  - 1/2 cup Basil  - More olive oil  1. Add tomato, onion and garlic to a baking tray and sprinkle the basil, oregano, thyme, salt, pepper and olive oil on top. Toss to evenly season your vegetables and bake, uncovered, for 30-40 mins at 180°C  2. Remove from the oven and straight into a blender, mixing until smooth. Slowly add in stock until you reach your desired thickness. 3. Transfer to a saucepan or pot to heat up and optionally add in some heavy/thickened cream for texture and richness.  4. Add sundried tomato’s, capers, basil, garlic and Parmesan to the cup of a blender and pulse until it comes together. Add in olive oil and mix until smooth. Season to taste with salt and pepper and adjust any of the other ingredients to your taste (add more basil etc)  5. Spread your pesto on the bottom slice of bread and add a layer of high moisture cheese (mozzarella, Gouda, cheddar, American cheese). Add the top layer of bread and smear a nice amount of garlic butter on top. 6. Pan fry with the buttered side down on low heat for 2-4 minutes. Spread some more butter on the other side of the sandwich and flip, frying for another 2-4 minutes or until golden brown  7. Serve your hot soup with a dash of olive oil and your pesto grilled cheese.
