Leek Gratin - Another Day In Paradise Ingredients 4 leeks – trimmed, sliced in half lengthwise, and washed Panko bread crumbs 1 sprig rosemary – leaves trimmed and finely chopped Zest of 1 lemon 2 tbsp EVOO (extra virgin olive oil) 1tbsp AP flour 1tbsp unsalted butter 300ml whole milk 100g mature cheddar cheese – grated 1 clove garlic – grated with a microplane 1 tbsp Dijon mustard Salt and pepper Steam the leeks for 7 minutes. Add the flour and butter to a saucepan over medium heat. Whisk until combined and lightly golden, about 3-4 minutes. Slowly stream in the milk while whisking. When all the milk is combined and there are no lumps, add the grated garlic, mustard, and cheese. Cook until the cheese is melted and you have a smooth sauce. Check for seasoning before adding salt and pepper. Add the breadcrumbs, rosemary, and lemon zest to a pan with a generous amount of EVOO. Toast until lightly golden - lightly season with salt. Layer the leeks, cut side up in a sheet pan or baking dish. Spread the cheese sauce over evenly then add the breadcrumbs. Bake at 200°C (392°F) for 10 minutes. I had mine with lightly dressed gem lettuce and quick-pickled onions. Just add some nice vinegar and a little sugar to sliced onion and chili.
Pork & Clams - Another Day In Paradise Bright and refreshing yet also comforting. Might seem a bit cheffy but it comes together easily and it’s relatively affordable, considering how extravagant it feels. Clams Pork Chop 1 red chilli finely diced (birds eye if you want it spicy) 1 thumb ginger sliced into thin strips 1 lemongrass finely diced 1/2 fennel + fronds thinly sliced coriander stem finely diced 1-2 limes 1 tbsp fish sauce 1/2 cup chicken stock (or preferred stock) 1 tbsp white vinegar (rice/cider/white wine) A pinch of salt, sugar, msg (my mix is roughly 3 parts sugar, 2 parts salt, 1 part msg) Handful of Thai basil Salt & Pepper Season the pork chop with salt before leaving uncovered in the fridge for a couple hours (I leave mine overnight). Cook the skin over a medium heat for 3-5 minutes. Sear on both sides with weight applied. Pork chops love to curl leaving a sad pale spot in the centre. Season with a little more salt and black pepper while it rests. While the pork is resting add the chilli, ginger, lemongrass, and coriander stems to a large pan with the rendered pork fat. Add the clams, stock, fish sauce, and vinegar. Steam for 4-6 minutes or until the clams have opened. Finish with the fresh fennel, Thai basil, lime, and a little salt/sugar/msg or a little pinch of sugar to balance the acidity.

Asparagus With Spicy Hollandaise - Another Day In Paradise Asparagus is coming, and I’m ready for it. I snuck a little gochujang into this hollandaise, but you can leave it out and make the classic version. I love it with a sharply dressed frisée salad and a poached egg could hang out too. Ingredients: • Asparagus • 2 egg yolks • 250g unsalted butter • 1 tbsp gochujang (optional) • Splash of white wine vinegar • Squeeze of lemon • Lardons • Frisée • Oil and vinegar • Salt Instructions: Cook asparagus in heavily salted water for 3 to 5 minutes. Shock in an ice bath, then pat dry and set aside. Fry the lardons and set aside. Add the egg yolks and gochujang to a bowl over a saucepan with simmering water (double boiler). Mix until combined, then add a splash of vinegar or lemon before slowly streaming in the melted butter, mixing continuously. Continue the process until you’ve added all the butter. Use a splash of water to loosen the mixture to the right consistency. You can add salt, but the gochujang seasoned mine enough. Quickly sear the asparagus to warm up and give them some colour before dressing with the sauce and chives. Dress the salad with oil and white wine vinegar.#fyp #asmr #asparagus season
