BUFFALO CHICKEN SALAD 🥬🍗🔥 This salad is soooo good 🙌 Even my husband who usually doesn’t like salad LOVES this one!! It has so much flavor and only takes about 25 minutes to make, so is perfect for busy weeknights!  I love prioritizing protein on a salad because it makes them more filling and satiating, and this salad packs 55g of protein, plus lots of veggies and healthy fats! This recipe makes 2 salads.  Salad ingredients:  - 1 large chicken breast  - 2 tbsp blackened seasoning  - 1 tsp olive oil  - 1 head of romaine, chopped  - 1 cucumber, sliced  - 1/2 cup cherry tomatoes, halved - 1 carrot, grated  - 1/4 of a red onion, thinly sliced  - 2 tbsp buffalo hot sauce  - 2 tbsp crumbled blue cheese for topping - 1 diced green onion for topping Homemade blue cheese dressing:  - 1/2 cup full fat plain greek yogurt  - 1/4 cup crumbled blue cheese - 2 tbsp vinegar (can use white vinegar, apple cider vinegar or lemon juice) - Salt + pepper to taste How to: - Butterfly the chicken breast then pound out to about 1/2 inch thickness.  - Season both sides well with blackened seasoning.  - Heat olive oil in a skillet, then sear chicken for 5-6 minutes per side or until cooked through.  - While the chicken is cooking slice up all of the veggies and make the blue cheese dressing by whisking together all of the ingredients.  - Add romaine and sliced veggies to your plate, then top with sliced chicken. Drizzle on blue cheese dressing and buffalo sauce.  - Garnish with crumbled blue cheese and diced green onion.
