Preferably charcoal -let rest 10 mins -slice thinly against the grain, then into cubes -combine hummus ingredients and 2 ice cubes into food processor -add a splash of water if too thick -blend for 8-10 minutes -add an ice cube every 2 minutes to prevent from getting warm -taste and adjust with more tahini, salt, or lemon juice as you see fitting -sprinkle salt over thinly sliced onion -crush with your hand until juices are being released -combine in a bowl with parsley and sumac -combine yogurt, harissa, lemon juice, and salt in a bowl.  Taste and adjust to your liking -Serve on a wood cutting board.
