Steak Frites Sambo w/chimichurri  Ingredients:  - 400g scotch fillet  - 1/2 cup rocket  - 1 sub roll  - 1/4 cup sliced parsley  - 1/4 cup sliced coriander  - 1 birdseye chilli, fine dice - 1/2 tsp capers, fine dice - 2 cloves garlic, grated - 1 tbsp red wine vinegar  - 1/2 cup Extra virgin olive oil  - 100g shoestring fries  - 1/2 tsp smoked paprika  - 1/4 tsp cayenne pepper - 1/2 tsp garlic powder  - 1/4 tsp black pepper  - 1/2 tsp sugar  - 1/2 tsp salt  - 2 slices swiss cheese  1. Heavily season the steak with salt and leave on the kitchen bench for at least 1 hour. Pat dry with paper towel and gently place in a screaming hot cast iron pan with 1 tbsp cooking oil (I used lard), cooking until the internal temperature reaches 50°C and a nice crust has developed. Remove from the pan and wrap in tin foil for at least half the cooking time (10 mins cooked = 5 mins rested)  2. Combine the parsley, coriander, chilli, red wine vinegar and olive oil in a bowl seasoning generously with salt and pepper. Add any additional olive oil if necessary. Leave in the fridge until needed.  3. Air fry frozen shoestring fries (lazy I know) following the directions on the packet. Then season with smoked paprika, cayenne, garlic powder, salt, pepper and sugar. If the seasonings don’t stick add a small amount of olive oil and toss through.  4.
