Ingredients: - 500g ground turkey - 1 can black beans (15 oz), drained and rinsed - 1 can kidney beans (15 oz), drained and rinsed - 2 cups diced tomatoes (fresh or canned) - 1 red bell pepper, diced - 1 onion, chopped - 2 cloves garlic, minced - 1 tsp cumin - 1/2 tsp turmeric - 1 tbsp olive oil - 1 cup vegetable broth or water - Salt and pepper to taste - Fresh coriander for garnish Instructions: 1. Heat olive oil in a large pot over medium heat. 2. Add chopped onion and garlic; sauté until translucent, about 3-4 minutes. 3. Add ground turkey; cook until browned, breaking it apart with a spoon, about 5 minutes. 4. Stir in cumin and turmeric; cook for 1 minute. 5. Add diced tomatoes, red bell pepper, black beans, kidney beans, and vegetable broth. 6. Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes, stirring occasionally. 7.
