CASSAVA BIBINGKINITAN   Introducing mini cassava bibingka – a delicious, bite-sized Filipino cassava cake! These moist little treats are naturally sweet and loaded with tropical flavor from coconut cream and condensed milk. Each mini bibingka is baked to golden perfection and topped with a dreamy coconut-caramel sauce. Perfect for dessert or an afternoon snack, and they're super easy to make. Grease a muffin tin.  3. Mix the cassava batter: In a large bowl, combine the grated cassava, 1/4 cup sugar, condensed milk, coconut cream, egg, vanilla, and melted butter. Mix until smooth. Gently fold in the  coconut. 4. Bake the cakes: Divide the batter evenly among the prepared muffin cups. Bake for 25 minutes, or until the tops are set. 5. Add the topping: Remove the cakes from the oven. Spoon about 1 tablespoon of the coconut-caramel topping onto each cake and spread it evenly. 6. Finish under the broiler: Return the tin to the oven and bake an additional 5 minutes.
