A classic Sunday dinner featuring flavorful roasted lemon herb chicken thighs, creamy garlic mashed potatoes, and crispy roasted broccoli. Ingredients: - 4 bone-in, skin-on chicken thighs - 2 lemons, sliced - 3 cloves garlic, minced - 2 tbsp olive oil - 1 tsp dried thyme - 1 tsp dried rosemary - Salt and pepper to taste - 4 large potatoes, peeled and chopped - 4 tbsp butter - 1/2 cup milk - 1 bunch broccoli, cut into florets - 2 tbsp olive oil - Salt and pepper to taste Instructions: 1. Preheat oven to 400°F (200°C). 2. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. 3. Rub the mixture all over the chicken thighs. Place in a baking dish, surround with lemon slices. 4. Roast for 35-40 minutes until chicken is cooked through and skin is crispy. 5. Meanwhile, cook potatoes in boiling salted water until tender, about 15 minutes. Drain. 6. Mash potatoes with butter and milk until smooth. Season with salt and pepper. 7. Toss broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet. 8. Roast broccoli in the same oven for about 15-20 minutes until tender and slightly charred. 9.
