Fall-inspired meal prep that tastes good reheated (part 3) because buffalo chicken screams fall 🍁✨🍗 FULL RECIPE - 1.5 lbs ground chicken (or turkey) - 1/2 cup panko or Italian bread crumbs - 1 egg - 1 celery stalk (finely chopped) - 1 carrot, shredded - 1/2-1 medium red onion - 2 cloves minced garlic - 3 tsp ranch seasoning - Salt + pepper to taste - 3 tbsp + 1/3 cup buffalo sauce (separately) - for topping: green onions, more buffalo sauce, ranch or blue cheese - Rice of choice - Veggie of choice (I used steamed broccoli, but Brussels sprouts would be good too!) Preheat oven to 400 degrees. In a large bowl, combine chicken, bread crumbs, egg, celery, carrot, garlic, onion, ranch seasoning, 3 tbsp buffalo sauce, salt + pepper & mix until well combined. Roll into balls and place on a greased sheet pan. Bake for 25 minutes or until the meatballs look golden brown & slightly crispy. While meatballs are baking, prepare rice & veggies. Remove meatballs from oven when they’re done and mix with remaining 1/3c of buffalo sauce.
