ill never understand how yall dont get people had no acces to any spices, they often where poor, not much grows in these countries. they had to be creative and made some amazing foods, just gotta learn to love flavour of the ingredients and not tons of salt which often has ruined our taste these days

European food was bland at first because the majority of people couldn't afford spices, so the only food with huge amount of spices was the food that rich people were eating. Then, the spices started being affordable to everybody, so all the food was actually full of flavor. Rich people didn't like it, so they dropped spices and made their food as bland as possible. So like always, people followed what rich people did and stopped using spices as well. Just a little back and forth

Interesting story (spoiler alert, it was the rich again). When Britain started colonising places, it became extremely fashionable for rich people to impress their friends with the rare and expensive spices from “the new world” but, when spices began to become available to the general public, the rich differentiated themselves again. This time they promoted the idea that THEY didn’t need spices to disguise poor quality food like poor people did. They “bought the best” and you needed to experience it in its natural state to appreciate the subtle flavours. That concept of high cuisine being plain has affected British cuisine for centuries. 😉

well... at least for the UK I can tell you that essentially what happened was that once spices were accessible to the general public the high classes didn't want to eat all those special spices anymore as they obviously would never want to do anything that the lower classes did, and so they decided to focus on the quality of the foods themselves with as little spice as possible, changing the fashion, this then popularised the idea that if you had to put spices on your food it was to cover up how awful it was, it's all fuckery tbh 😂😂😂
