Servings: 4 Ingredients 4 cod fillets, about 5 to 6 ounces each Salt and black pepper, to taste 1 tablespoon avocado oil or olive oil 2 green onions, sliced 1 teaspoon sesame seeds Cooked white rice and broccolini, for serving For the ginger-soy glaze ⅓ cup low-sodium soy sauce 3 tablespoons honey 1 tablespoon rice vinegar 1 tablespoon sesame oil 1 tablespoon fresh ginger, grated 2 garlic cloves, minced 1 teaspoon cornstarch 1 tablespoon water Directions 1. Pat the cod fillets dry and season lightly with salt and black pepper. 2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. 3. Mix the cornstarch and water in a separate small bowl until smooth, then stir it into the sauce. 4. Heat the oil in a large skillet over medium-high heat. Add the cod and cook for 3 to 4 minutes on the first side. 5. Carefully flip the cod and cook for another 2 to 3 minutes. 6. Pour the ginger-soy sauce into the skillet. Reduce the heat to medium and simmer for 2 to 3 minutes, spooning the glaze over the fish, until the cod is cooked through and flakes easily with a fork. 7. Serve over rice with broccolini.
