Here are 3 levels of french fries. Level 1: Store-Bought Frozen Fries Deep fry, pan fry, air fry— there are a lot of ways to cook these. Honestly, they're okay, but we can do better. Level 2: Homemade French Fries Peel and cut potatoes into strips before soaking in water. Coat the strips in Drake's or a similar dry fry mix and a little Cajun seasoning. Deep fry in a neutral oil for about 8 minutes and you've got yourself a nice snack. These are an upgrade from Level 1 but we can still do better. Level 3: Detroit 75 Garlic Cilantro Fries Cut your potatoes into straight fries and soak for about 4 hours in cold water. Blanch in hot oil for about 4 minutes before removing to a sheet pan to air dry until cooled. Repeat this process 2 more times. After your 3rd and final fry, add salt, chopped garlic, and chopped cilantro right after they get out of the fryer to let all of those flavors marry.
