Tomato & Blue Cheese Tart 🍅 🧀 Ingredients: 150g Creamy Blue Cheese or any cheese 2 brown onions, thinly sliced 2 tbsp olive oil 3 tbsp chopped thyme leaves Salt, pepper 2 30cm squares shortcrust pastry 6 vine ripened tomatoes Handful basil leaves 2 tbsp balsamic glaze Method Preheat an oven to 220C. Unwrap the blue cheese & pull or cut into lots of small pieces. Place the onions, olive oil, half the thyme and a little salt, pepper into a medium saucepan & place over a medium high heat. Cook for 5 minutes, stirring until they begin to soften then cover, turn the heat to a medium and cook, stirring often, for 7-8 minutes until they just begin to caramelise but are still light in colour. Remove to a plate and cool. Cut the tops and bottoms off each tomato and slice each one into three thick slices. Lay them on a tray with paper towel, covering with more paper towel & let sit for 15 minutes to dry them out. Lay the sheets of pastry onto a sheet of baking paper, slightly overlapping each other in the centre to create a rectangle gently press them together at the join. Spread the onions over the pastry leaving a 3-4 cm boarder then scatter over half the blue cheese. Lay the tomatoes sliced over the onions, just slightly overlapping, in rows of 3 slices all the way down the tart. Fold the pastry up and over the edges of the tomatoes, crimping as you go. Brush the edges of the pastry with the egg scatter the remaining thyme leaves over the tomatoes with the remaining blue cheese. Bake this for 40-50 minutes, until the pastry is crisp and tomatoes nice and roasted.
