Love is in the air 💜 This is one of my favourite mould. I’m sure many would dm and ask about the source, so I’ll just share it here. This heart shape loaf tin is from San Neng, model SN2307 *Sweet stiff starter* 25g starter 75g flour 35g water 13g sugar *Dough* 175g bread flour 15g sugar 3g salt 75g milk 1 egg (~55g) 20g butter All of the sweet stiff starter purple potatoes paste - 13g purple potato powder + 30g water Method ➡️ Prepare sweet stiff starter and use when it’s triple. For me it takes about 7-8hrs at 27-28C. ➡️ Mix everything (except butter and purple potato powder) till dough comes together and strong. ➡️ Add butter and knead to achieve window pane. ➡️ split dough into two equal parts. One part add with purple potato paste ➡️ Bulk proof the dough for 1hr at 28C ➡️ Roll out the two dough and lay purple dough on top of plain dough then roll it up into a log shape ➡️ Final proof for approx 3-3.5hr at 28C (or proof to 80-90% fill the tin) ➡️ Bake with close lid at 170C for 40mins Happy valentines baking! 💜 #valentinesbaking #heartbread #love💜 #sannengbakeware #heartloaf #valentinesbread #sourdoughloaf #sourdough #sourdoughbread #sweetstiffstarter #sweetlevain #levain #sweetstarter #purplepotatobread #purplebread #purplepotatoloaf #valentines2024
