Mix until just combined. c) Add heavy cream and mix. d) Add cocoa powder (if using). e) Pour in the melted chocolate and mix until smooth. f) Dissolve cornstarch in 1 tbsp of the mixture, then stir it back in. 3. Assemble & Bake Pour half of the filling over the crust. Spread the cooled berry jam on top. Cover with the remaining filling. Bake in a water bath at 150 °C (300 °F) for 50–60 minutes, until the center is slightly jiggly. 4. Cool, Chill & Decorate Turn off the oven, leave the cheesecake inside with the door slightly open for 1 hour. Refrigerate for at least 6 hours or overnight.
