This is my recipe for Strawberry Tres Leches Cake 🍓 A soft and fluffy vanilla sponge soaked in a sweet three-milk mixture, layered with quick homemade strawberry jam and topped with naturally pink Chantilly cream. Perfect for spring, special occasions, or simply treating yourself 💗 Part 1: Soft Vanilla Sponge Ingredients: • 240 g all-purpose flour (2 cups, sifted) • 1 tbsp baking powder • 1 tsp cornstarch (optional) • ½ tsp salt • 200 g sugar (1 cup) • ¼ cup unsalted butter, softened (60 g) • ⅓ cup neutral oil or light olive oil (70 g) • 3 eggs + 1 egg white • 1½ tbsp vanilla extract • ⅓ cup whole milk (80 ml) • ¼ cup plain Greek yogurt (60 g) Instructions: 1. Preheat oven to 340°F (170°C). Grease and flour a 20–22 cm round pan. 2. Sift flour, baking powder, cornstarch, and salt together. 3. Beat butter with sugar until creamy. Add oil, then eggs one at a time, and vanilla. 4. Mix in yogurt and milk. 5. Add dry ingredients in 2–3 additions, mixing gently. 6. Bake for 30–35 minutes or until a toothpick comes out clean. Let cool completely. 🥛 Part 2: Three Milk Mixture Ingredients: • 1 can sweetened condensed milk • 1 can evaporated milk • ½ cup whole milk • ¼ cup heavy cream • 1 tsp vanilla extract (optional) Instructions: 1. Mix everything and chill. 2. Once the sponge is cool, poke holes all over the surface. 3. Slowly pour the milk mixture until absorbed. Cover and refrigerate for 4–8 hours. 🍓 Part 3: Quick Strawberry Jam Ingredients: • 200 g strawberries • 2½ tbsp sugar • Juice of ½ lemon • 1 tsp cornstarch dissolved in 1 tbsp water (optional) Instructions: 1. Cook strawberries with sugar and lemon juice until they release juices and thicken. 2. For a firmer texture, add cornstarch mix. 3. Cool completely. You can strain or leave the strawberry chunks. Part 4: Pink Strawberry Chantilly Cream Ingredients: • 1 cup cold heavy cream (240 ml) • 2 tbsp powdered sugar • 1 tsp vanilla extract • 2–3 tbsp of the strawberry jam Instructions: 1. Whip the cream with sugar and vanilla until soft peaks. 2. Add the strawberry jam and whip until firm and naturally pink. 🍰 Assembly: 1.
