Can’t get over how good these cannoli cookies are 🍪🧁🤎 ¾ cup salted butter (softened) (can use unsalted butter) ¼ cup granulated sugar 1 cup brown sugar 2 large eggs 1 tsp vanilla extract 2¼ cups all- purpose flour 1 tsp baking soda ½ tsp salt 1 cup mini chocolate chips FILLING  1 cup whole milk ricotta (strained) 1 cup powdered sugar ¼ cup mini chocolate  Pinch of ground cinnamon  1. Roll your cookies into balls and lightly press them down with your fingers. 12. Using your thumb, press down the center of your cookies to create a well for your cream. 13. Place about 1 tablespoon of your cannoli cream mixture into the center wells of each cookie. 14. Chill your cookies in the fridge for about 30 minutes. 15. Bake cookies at 350° for 14 minutes. 16. Take out and let completely cool. 17.
