HEALTHY LASAGNA SOUP 🍅🧀🍝 I have been seeing lasagna soup recipes on social media so I wanted to make a version that was little lighter and higher in protein, and oh my GOSH is this recipe delicious! Definitely one of my favorite dinners that I’ve made in a while, and it is also great for meal prepping for lunch. Oh - and it’s also made completely in one pot! 🙌 This lasagna soup only has 260 calories per serving with 32g of protein 💪 but it is still super rich, creamy and delicious! I love swapping out heavy cream for blended cottage cheese which not only lightens up the soup but also adds 28g of protein!  Makes 6 servings. ~260 calories, 32g protein, 23g carbs, 7g fat per serving. Ingredients 1/2 tbsp olive oil 1 white onion, finely chopped 1/2 tbsp minced garlic 1 lb lean ground beef (I used 93/7) 1 23.5 oz. jar marinara sauce 1 14.5-oz. can diced tomatoes 1 32-oz. container beef bone broth (can also use normal beef broth) 1 tsp onion powder 1 tsp italian seasoning 1/2 tsp red pepper flakes (optional) 1/2 tsp salt 1/4 tsp black pepper 1 cup 2% cottage cheese (I use good culture) 6 lasagna noodles broken into pieces How to: Heat olive oil in a large pot. Add finely chopped white onion and minced garlic and cook for 3-4 minutes until the onions start to soften. Add ground beef and break it up with a spatula until fully cooked through. Add marinara sauce, diced tomatoes, beef broth & seasonings. Stir, cover with a lid and simmer on low for at least 15 minutes, but you can simmer it for up to an hour for extra flavor! Break up lasagna noodles into 1-2 inch pieces. Add to the pot and cook for an additional 20-30 minutes until the noodles are soft. Remove the pot from the heat. Add the cottage cheese to a blender and blend until completely smooth (you can add a little water or broth to help it blend easier) then stir into the soup and serve! #lasagnasoup #healthydinner #winterdinner #healthysoup #viralrecipe
