Stir well, bring to a gentle simmer, cover with a lid and cook for about 15 minutes, stirring every couple of minutes, until the pasta is tender and the sauce has thickened. 💕While the pasta cooks, melt the remaining butter in a small pan. Add the panko breadcrumbs and parmesan and toast for 2–3 minutes, stirring constantly, until golden and crisp. 💕Once the pasta is cooked, lower the heat and stir through the cream cheese until smooth. Add the cheddar and mozzarella and stir until melted and glossy. Fold the chicken (and any resting juices) back through the mac & cheese. 💕Spoon into bowls and finish with the buttery parmesan crumbs and fresh parsley.
