@stevenmotocooks: is this how you do it? @Notorious Foodie @Notorious Cookware home cooking sessions: short rib with cranberry jus, glazed cranberries, and pan roasted brussel sprouts just got sent one of these beautiful cutting boards so wanted to respect it with a bit of a nicer first meal. thought these flavors represented us getting closer to the holidays so i went with a cranberry jus made from reducing cranberry juice with alliums then using it to deglaze my pan and reduce with more beef stock. cranberries are relatively tart so always have to include some sweetness to pair with them. brussel sprouts are earthy and are such a classic holiday pairing i thought it was only natural to use here. tart, savory sauce, earthy brussels, one of my favorites a nice short rib, it turned out not too bad. the plating could have used a LOT of work though, but i didn’t have any extra garnish so it isn’t too bad. hope you all enjoyed this little parody and as always feel free to comment below with any questions or message me directly :) #reels #culinary #culinaryatts #chef #cook
