Preheat oven to 350F. 2. Boil potatoes in water for about 15 minutes or until soft. 3. Spray cupcake tin with cooking spray, add a potato in each “cupcake” then smash down with another (smaller) tin or glass to get the cup shape. Add salt to potatoes. 4. Dice veggies. 5. On pan on high, cook turkey bacon until crunchy, flipping every minute or so then dice into small pieces. 6.
